I’ve been spending way too much idle time glancing at Facebook posts of all the salmon being caught out in Sekiu. Ahhh! It’s killing me to not be back out there. We had an epic time though on the opener and it sounds like it has been absolutely packed with people since then. This report is about what’s going on closer to home though, so let’s dig in!
Shrimp Ceviche Tostada Recipe
Last summer on a trip to Puerto Vallarta my friend and I stayed with her aunt and uncle. This is basically his recipe. He served it on tostadas in a way I had never had, but was delicious. We spread mayo on the tostada before adding the ceviche and toppings. I swear it is incredible. Everyone I have ever served has said so.

Sekiu (pronounced CQ) has been on fire since it opened on July 1st, 2020. My friend who went fishing with me on the opener said it was the best salmon fishing he’s ever experienced.
